Fishing is the main source of income for the people of Greenland, and halibut is among their finest catch. We have cooked it gently and sprinkled it with wild harvested Arctic thyme. A traditional herb in North Atlantic cooking, known as ‘tupaarnaq’ in Greenlandic. This fragrant herb pairs perfectly with the halibut’s delicate flavour.
